Cookery School’s Mac & Cheese
Yesterday was Nom Nom Nom 2012 which culminated in an epic meal involving everyone’s delicious Olympic dishes and our own special Mac & Cheese, pictured above in the big tray (image courtesy of tikicrhis). Lots of you have asked for the recipe, so here it is! As you can see, it’s not a strict “recipe” per se, which makes it perfect for people who like to improvise - something we suspect our Nom Nom Nom participants do very well. Enjoy!
- Boil the macaroni or pasta of choice but must be on the chunky side ie no angel hair pasta
- Make a good batch of a tomato sauce flavoured with fresh herbs
- Make a huge batch of béchamel sauce
- Great loads of lovely cheddar cheese
Then simply place the pasta in a greased baking tin, “thread” the tomato sauce through it so that the pasta has the sauce weaving through it. Then pour a layer of béchamel over the whole lot. Finally top with loads of coarsely grated cheddar and place in oven 180 degrees C until the dish is bubbling and the cheese is golden and slightly crisp.
Food and the 2012 Olympics

Today marks 100 days until the 2012 Olympics starts here in London (Londonium MMXII!!). And if you’ve been watching Great British Menu at all, then you know that Olympic-themed foodie events are cropping up all over Britain.
We confess we’ve caught a bit of the Olympic fever ourselves. We’ve been thinking about our favourite foods from around the globe, feasts for Olympians, and how to get teams of people together and excited about the cuisine of other countries.
To begin, we’re running a series of Olympic cookery classes, starting on Independence Day with an all American feast, followed by sessions on Russian cooking, South African Cooking and Australian cooking (yes, there will be BBQ spatchcocked chicken, in case you were wondering).
We’re also putting on a series of Olympic menus as corporate cooking events, a great way for companies to get their colleagues jazzed about food, the Olympics, and their workplace (competitive element available upon request!).
In addition to our own Olympic-themed courses and events, we’re VERY excited to be hosting this year’s NomNomNom 2012 for the fifth year in a row on Sunday July 8th 2012. NomNomNom is a super fun cooking competition for food bloggers, writers, photographers and food enthusiasts of all kinds. Here’s how it works: nine teams will shop for and prepare a three course Olympic menu, to be judged by our panel of expert judges, and by fellow bloggers in public Viewer’s Choice vote.
